Ingredients
  

  • 1 tbsp olive oil
  • 1 yellow onion 150g, diced
  • 2 garlic cloves minced
  • 5 cups 1.2L chicken broth
  • ¾ lb 340g chicken breast, cut into bite-sized pieces
  • 1 can 15 oz, 425g pumpkin puree
  • 1 can 15 oz, 425g black beans, rinsed
  • ½ cup 80g frozen corn
  • 1 –2 chipotle peppers in adobo sauce minced
  • 1 tsp adobo sauce from chipotle can
  • 1 tbsp ground cumin
  • ½ tsp salt
  • ½ bunch 15g fresh cilantro, roughly chopped

Instructions
 

Sauté the Aromatics

  • In a large soup pot, I heat 1 tbsp olive oil over medium heat. I add 1 diced onion and 2 minced garlic cloves, sautéing for 3–5 minutes until soft and fragrant, creating a flavorful base for this hearty soup.

Cook the Chicken

  • I add ¾ lb bite-sized chicken breast pieces and 5 cups chicken broth, bring to a boil, then reduce to a low simmer. I cover and cook for 15–20 minutes until the chicken reaches 165°F, ensuring tender meat for this cozy chicken and pumpkin soup.

Add Pumpkin and Veggies

  • I stir in 1 can pumpkin puree until smooth, then add 1 can rinsed black beans, ½ cup frozen corn, 1–2 minced chipotle peppers, 1 tsp adobo sauce, and 1 tbsp ground cumin. I simmer gently for 10 minutes to blend flavors, tasting to adjust spice if needed for this Tasty Chicken and Pumpkin Soup.
