Ingredients
  

For the Sugar Cookie Crust:

  • 1/2 cup unsalted butter softened
  • 3/4 cup granulated sugar
  • 1 large egg
  • 1/2 teaspoon vanilla extract
  • 1/4 teaspoon almond extract
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt

For the Cream Cheese Frosting:

  • 8 oz cream cheese softened
  • 1/4 cup unsalted butter softened
  • 1 cup powdered sugar
  • 1 teaspoon vanilla extract

For the Toppings:

  • Fresh fruit such as strawberries, blueberries, kiwi, mandarin oranges, and raspberries

Instructions
 

Prepare the Sugar Cookie Crust:

  • Preheat the oven to 350°F (175°C). Line a pizza pan or baking sheet with parchment paper.
  • In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, and almond extract, mixing well.
  • In a separate bowl, whisk together the flour, baking powder, and salt. Gradually add the dry ingredients to the wet ingredients, mixing until combined.
  • Press the dough onto the prepared pan to form a round crust about 1/4 inch thick.
  • Bake for 10-12 minutes, or until the edges are lightly golden. Allow to cool completely on a wire rack.

Prepare the Cream Cheese Frosting:

  • In a medium bowl, beat the cream cheese and butter until smooth and creamy.
  • Add the powdered sugar and vanilla extract, beating until well combined and fluffy.

Assemble the Fruit Pizza:

  • Spread the cream cheese frosting evenly over the cooled sugar cookie crust.
  • Arrange the fresh fruit on top of the frosting in a decorative pattern.

Serve:

  • Slice and serve immediately, or refrigerate until ready to serve.

Notes

  • For the best texture, serve the fruit pizza immediately after assembling. If storing, keep the frosting and fruit separate from the crust and assemble just before serving.
  • You can use any combination of fresh fruits based on your preference and seasonality.
