For the Sugar Cookie Crust:
- 1/2 cup unsalted butter softened
- 3/4 cup granulated sugar
- 1 large egg
- 1/2 teaspoon vanilla extract
- 1/4 teaspoon almond extract
- 1 1/4 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/4 teaspoon salt
For the Cream Cheese Frosting:
- 8 oz cream cheese softened
- 1/4 cup unsalted butter softened
- 1 cup powdered sugar
- 1 teaspoon vanilla extract
For the Toppings:
- Fresh fruit such as strawberries, blueberries, kiwi, mandarin oranges, and raspberries
Prepare the Sugar Cookie Crust:
Preheat the oven to 350°F (175°C). Line a pizza pan or baking sheet with parchment paper.
In a large bowl, cream together the butter and granulated sugar until light and fluffy. Add the egg, vanilla extract, and almond extract, mixing well.
