Ingredients

  • 1 sheet of puff pastry store-bought or homemade
  • 1 cup fresh spinach chopped
  • 1/2 cup feta cheese crumbled
  • 1/4 cup cream cheese softened
  • 1 tablespoon olive oil
  • 1 clove garlic minced
  • 1/4 teaspoon dried oregano
  • Salt and pepper to taste
  • 1 egg for egg wash

Instructions

  • Preheat your oven to 375°F (190°C).
  • In a skillet, heat the olive oil over medium heat. Add the garlic and sauté for 1 minute.
  • Add the spinach to the skillet and cook until wilted, about 3-4 minutes. Remove from heat and let it cool slightly.
  • In a bowl, combine the cooked spinach, feta cheese, cream cheese, oregano, salt, and pepper. Stir well to combine.
  • Unroll the puff pastry on a lightly floured surface. Spread the spinach and feta mixture evenly over one half of the pastry.
  • Fold the other half of the puff pastry over the filling to create a rectangle. Press down the edges to seal.
  • Cut the pastry into 1-inch strips and twist each strip into a spiral shape.
  • Place the twisted pastries on a baking sheet lined with parchment paper.
  • Beat the egg and brush it over the twists for a golden finish.
  • Bake for 15-20 minutes, or until the pastries are golden and puffed up.

Notes

  • Leftovers can be stored in an airtight container in the refrigerator for up to 2 days.
  • Reheat in the oven at 350°F (175°C) for 5-10 minutes to restore crispiness.
  • Frozen twists can be stored for up to 2 months. Bake from frozen for an additional 5-10 minutes.
  • Frozen spinach can be used if fresh spinach isn’t available, just be sure to thaw and drain it well.
  • The recipe can be made ahead by preparing the twists and refrigerating them before baking.
  • Cheese alternatives like parmesan, ricotta, or mozzarella can be used instead of feta.
  • For a different texture, phyllo dough or pie crust can be used instead of puff pastry.
