Ingredients

For the Cobbler:

  • 1/3 cup unsalted butter melted
  • 3/4 cup whole milk
  • 2 tsp vanilla extract
  • 1 1/2 cups granulated sugar
  • 1 1/2 cups all-purpose flour
  • 2 1/4 tsp baking powder
  • 3/4 tsp salt
  • 2 tsp ground cinnamon
  • 1 1/2 cups brown sugar packed
  • 1 1/2 cups hot water

For the Topping:

  • 1/4 cup granulated sugar
  • 1/2 tsp ground cinnamon

Instructions

  • Preheat and Prep: Preheat oven to 350°F (175°C). Pour 1/3 cup melted butter into a 9x13-inch baking dish, spreading evenly.
  • Make the Batter: In a large bowl, whisk together 3/4 cup milk, 2 tsp vanilla extract, and 1 1/2 cups granulated sugar. Add 1 1/2 cups flour, 2 1/4 tsp baking powder, 3/4 tsp salt, and 2 tsp cinnamon, whisking until just combined (a few lumps are okay).
  • Layer the Cobbler: Pour the batter over the melted butter in the baking dish; do not stir. Sprinkle 1 1/2 cups packed brown sugar evenly over the batter. Carefully pour 1 1/2 cups hot water over the top, again without stirring.
  • Bake: Bake for 30-35 minutes, until the top is golden brown and mostly set (the center should be gooey but not liquid).
  • Add Topping: Mix 1/4 cup granulated sugar and 1/2 tsp cinnamon. Sprinkle over the hot cobbler immediately after baking.
  • Serve: Let cool slightly, then serve warm as a cozy summer dessert, ideally with vanilla ice cream or whipped cream.

Notes

  • Don’t Overmix: Stir batter just until combined to keep the cobbler light and tender.
  • Layer, Don’t Stir: Pour batter and water without mixing to achieve the gooey, caramelized base.
  • Check Doneness: The center should be soft but not runny; avoid overbaking for the best texture.
  • Serve Warm: Enjoy soon after baking for the ultimate warm, gooey experience in this summer dessert.
  • Enhance with Toppings: Add ice cream or whipped cream for extra indulgence.
