Ingredients
  

Sweet Potatoes:

  • 2 large sweet potatoes peeled and cut into 1-inch cubes

Seasoning:

  • 2 tablespoons olive oil
  • 3 garlic cloves minced
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • 1/2 teaspoon smoked paprika
  • 1/4 cup grated Parmesan cheese

Garnish:

  • 1 tablespoon chopped fresh parsley

Instructions
 

  • Preheat Oven: Preheat oven to 425°F (220°C) and line a baking sheet with parchment paper.
  • Toss Ingredients: In a large bowl, toss sweet potato cubes with olive oil, garlic, salt, pepper, and smoked paprika until coated.
  • Roast: Spread potatoes on the baking sheet in a single layer. Roast for 25–30 minutes, flipping halfway, until golden and tender.
  • Add Parmesan: Sprinkle Parmesan over the potatoes during the last 5 minutes of baking.
  • Garnish and Serve: Remove from oven, garnish with parsley, and serve.

Notes

  • For extra crispiness, avoid overcrowding the pan.
  • You can add a pinch of cayenne for heat or swap Parmesan for Pecorino Romano.
