Ingredients

  • 3 ripe but firm pears Bartlett or Bosc, 2 chopped, 1 thinly sliced
  • cups 190g all-purpose flour
  • ¾ cup 150g granulated sugar
  • ¼ cup 50g brown sugar (plus 1 tbsp for topping)
  • ½ cup 120g plain Greek yogurt
  • ½ cup 1 stick, 115g unsalted butter, softened
  • 2 large eggs
  • 1 tsp baking powder
  • ½ tsp baking soda
  • ½ tsp salt
  • 1 tsp almond extract
  • ½ tsp vanilla extract
  • Nonstick cooking spray or butter for greasing

For Serving (Optional):

  • Crème fraîche or Greek yogurt

Instructions
 

Prep the Oven and Pan

  • I preheat the oven to 350°F (175°C) and grease a 9-inch round metal cake pan with nonstick spray or butter, lining the bottom with parchment for easy release of this rustic fruit cake.

Prepare the Pears

  • I peel and chop 2 pears into small pieces for the batter and thinly slice the third pear for the top, ensuring a juicy, elegant almond pear cake.

Mix the Batter

  • In a large bowl, I cream ½ cup butter and ¾ cup granulated sugar until light and fluffy. I add 2 eggs one at a time, scraping the bowl, then mix in ½ cup Greek yogurt, 1 tsp almond extract, and ½ tsp vanilla. In another bowl, I whisk 1½ cups flour, 1 tsp baking powder, ½ tsp baking soda, and ½ tsp salt. I alternate adding dry ingredients and yogurt to the wet mixture, starting and ending with flour, to keep this cozy pear bake soft.

Fold in Pears

  • I gently fold the chopped pears into the batter, ensuring even distribution for a flavorful rustic fruit cake.

Assemble and Bake

  • I spread the batter into the prepared pan, arrange the sliced pear on top in a fan pattern, and sprinkle with 1 tbsp brown sugar. I bake for 40–45 minutes until golden and a toothpick comes out clean. I cool for 10 minutes before slicing this almond pear cake.
