Ingredients
  

  • 2 lb 900g chicken fillets
  • 1 tbsp 15ml olive oil
  • 1 tsp 3g garlic powder
  • 1 tsp 3g onion powder
  • 1 tsp 3g paprika
  • 1 tsp 6g salt
  • ½ tsp 1g black pepper
  • ½ cup 120ml chicken broth
  • 1 tbsp 15ml lemon juice
  • Fresh parsley chopped (for garnish)

Instructions
 

Prep and Sear

  • I set the Instant Pot to sauté and heat 1 tbsp olive oil for 1 minute. I season 2 lb chicken fillets with 1 tsp each of garlic powder, onion powder, paprika, 1 tsp salt, and ½ tsp black pepper, coating evenly. I sear the chicken in the pot for 2–3 minutes per side until golden.

Add Liquids

  • I pour in ½ cup chicken broth and 1 tbsp lemon juice, stirring to combine for a moist, zesty dish.

Pressure Cook

  • I close the lid, set the valve to sealing, and cook on manual high pressure for 10 minutes. After cooking, I let it naturally release for 5 minutes, then quick-release the remaining pressure carefully.

Shred and Serve

  • I remove the chicken, shred it with two forks, and garnish with fresh parsley. I serve it hot for a delicious meal.

Notes

  • This recipe is gluten-free and dairy-free.
  • You can add vegetables for more nutrition.
  • Store leftovers in an airtight container in the fridge.
