- 0.5 cup unsweetened cocoa powder
- 1 cup granulated sugar
- 1 tsp baking powder
- 0.5 tsp baking soda
- 0.5 tsp salt
- 0.5 cup unsalted butter melted
- 2 large eggs
- 1 tsp vanilla extract
- 0.5 cup buttermilk
- 0.5 cup M&Ms plus extra for topping
Preheat the oven to 350°F (175°C) and line a muffin tin with cupcake liners.
In a large bowl, whisk together flour, cocoa powder, sugar, baking powder, baking soda, and salt.
In another bowl, mix melted butter, eggs, and vanilla extract until smooth.
Gradually add buttermilk to the wet mixture, stirring continuously.
Slowly add the dry ingredients to the wet mixture, mixing until just combined.
Fold in the M&Ms gently.
Divide the batter evenly among the cupcake liners and bake for 18-20 minutes, or until a toothpick inserted into the center comes out clean.
Cool in the pan for 10 minutes, then transfer to a wire rack to cool completely.
Top with additional M&Ms before serving.
