Ingredients
  

  • 1 sheet 250g puff pastry, thawed
  • 4 large eggs
  • ½ cup 120ml heavy cream
  • ¼ cup 25g grated cheddar cheese (or mozzarella)
  • ¼ tsp salt
  • ¼ tsp black pepper
  • ¼ cup 40g cooked bacon, chopped
  • ¼ cup 40g sautéed spinach, drained
  • ¼ cup 40g diced tomatoes
  • 1 tbsp 3g fresh parsley or chives, chopped (optional, for garnish)

Instructions
 

Prep the Pastry

  • I preheat the oven to 375°F (190°C) and grease a 12-cup mini muffin tin. I roll out 1 sheet of puff pastry and cut 12 circles with a 2.5-inch cutter, pressing each into a muffin cup for these quiche bites.

Make the Egg Mixture

  • In a medium bowl, I whisk 4 eggs, ½ cup cream, ¼ tsp salt, and ¼ tsp pepper until smooth for the base of these Mini Quiches 4 Ways.

Add Fillings

  • I divide ¼ cup each of bacon, spinach, and tomatoes among the pastry cups, mixing and matching for variety in these mini quiches.

Fill and Top

  • I pour the egg mixture into each cup, filling ¾ full. I sprinkle ¼ cup cheddar cheese over the top for cheesy Mini Quiches 4 Ways.

Bake and Serve

  • I bake for 15–20 minutes until set and golden. I cool for 5 minutes, garnish with 1 tbsp parsley or chives if desired, and serve these quiche bites warm.
