Ingredients
  

For the Meatballs:

  • 1 lb 450g ground chicken
  • ½ cup 50g breadcrumbs
  • ¼ cup 25g grated Parmesan cheese
  • 1 large egg
  • 2 cloves garlic minced
  • 2 tbsp fresh parsley chopped
  • ½ tsp onion powder
  • Salt and black pepper to taste
  • 1 tbsp olive oil for baking or searing

For the Creamy Sauce:

  • 2 tbsp butter
  • 3 cloves garlic minced
  • 1 cup 240ml chicken broth
  • ½ cup 120ml heavy cream
  • ½ cup 50g grated Parmesan cheese
  • 1 tsp Italian seasoning
  • ½ tsp crushed red pepper flakes optional
  • Salt and black pepper to taste
  • Fresh basil or parsley for garnish

Instructions
 

Make and Bake the Meatballs

  • I preheat the oven to 400°F (200°C) and line a baking sheet with parchment. In a bowl, I mix 1 lb ground chicken, ½ cup breadcrumbs, ¼ cup Parmesan, 1 egg, 2 cloves minced garlic, 2 tbsp parsley, ½ tsp onion powder, salt, and pepper until just combined. I form 1½-inch meatballs, place them on the sheet, and bake for 15–18 minutes until cooked through. Alternatively, I sear them in 1 tbsp olive oil over medium heat, browning all sides, for this tender chicken meatballs dish.

Prepare the Creamy Sauce

  • In a large skillet, I melt 2 tbsp butter over medium heat, sauté 3 cloves minced garlic for 30 seconds, then add 1 cup chicken broth and bring to a simmer. I stir in ½ cup heavy cream, ½ cup Parmesan, 1 tsp Italian seasoning, and ½ tsp red pepper flakes (if using), simmering for 3–4 minutes until thickened for this creamy meatball dinner.

Combine and Serve

  • I add the meatballs to the sauce, spooning it over to coat. I simmer for 2–3 minutes, then garnish with fresh basil or parsley for a stunning Marry Me Chicken Meatballs dish, served hot.

Notes
