Preheat oven to 350°F (175°C). Line baking sheets with parchment paper.
In a large bowl, cream together butter, brown sugar, and maple syrup until light and fluffy.
Beat in egg and vanilla extract until well combined.
In a separate bowl, whisk together flour, baking soda, salt, and cinnamon.
Gradually add dry ingredients to wet ingredients, mixing until just combined.
Optionally, chill dough for 30-60 minutes if too soft to handle.
Roll tablespoon-sized portions of dough into balls. Roll each ball in granulated sugar if desired.
Place dough balls on prepared baking sheets, spacing about 2 inches apart.
Bake for 10-12 minutes until edges are lightly golden. Centers may appear soft but will firm as they cool.
Cool on baking sheets for a few minutes, then transfer to wire racks to cool completely.
