Main Soup:
- 1 tablespoon olive oil
- 1 pound Italian sausage mild or spicy casings removed
- 1 medium yellow onion diced
- 3 garlic cloves minced
- 1 red bell pepper diced
- 1 teaspoon dried oregano
- 1 teaspoon dried basil
- 1/2 teaspoon crushed red pepper flakes optional
- 1 can 28 ounces crushed tomatoes
- 4 cups chicken broth
- 2 cups water
- 8 lasagna noodles broken into pieces
- Salt and black pepper to taste
Cheese Topping:
- 1/2 cup ricotta cheese
- 1/2 cup shredded mozzarella cheese
- 1/4 cup grated Parmesan cheese
- 1/4 cup chopped fresh basil or parsley
Prepare the Soup: Heat olive oil in a large pot, cook Italian sausage until browned. Add onion, garlic, and red bell pepper. Stir in oregano, basil, and red pepper flakes. Pour in crushed tomatoes, chicken broth, and water. Simmer and add lasagna noodles. Season with salt and pepper.
Make the Cheese Topping: In a small bowl, mix ricotta, mozzarella, and Parmesan cheese.
Serve: Ladle the soup into bowls, top with cheese mixture, and sprinkle with fresh basil or parsley.
- For a lighter version, use ground turkey or chicken sausage.
- You can substitute gluten-free noodles if needed.
