- 1 cup 100g whole almonds (or 1 cup almond flour)
- ¼ cup 30g all-purpose flour
- ½ cup 115g unsalted butter
- ½ cup 100g golden brown sugar
- ¼ cup 60ml honey
- ½ tsp vanilla extract
- ¾ cup 130g semi-sweet chocolate chips
Melt Butter and Sugar
In a medium saucepan, I melt ½ cup butter, ½ cup brown sugar, and ¼ cup honey over medium heat, stirring with a whisk until it reaches a gentle boil, then remove from heat.
Bake Cookies
I bake for 8 minutes, rotating the sheet halfway at 4 minutes, until the cookies spread thin and turn golden. I let them cool on the sheet for 5 minutes, then transfer to a rack.
Melt Chocolate and Assemble
In a microwave-safe bowl, I melt ¾ cup chocolate chips in 15-second bursts, stirring to prevent scorching. I spread a thin layer of chocolate on the bottom of one cookie and sandwich with another, repeating for all Lace Cookies with Chocolate. I let them set for 1–2 hours.
- Use almond flour- Almond flour or fresh-ground almonds are responsible for not just the delicious flavor, but also the texture of these lace cookies. If you replace almond flour with all-purpose, these cookies will not spread to become thin and crispy, so stick with the almonds.
- Trim the edges of your cookies- If your cookies come out a little irregular, you can trim them with scissors into circles, so they sandwich together just right.
- Keep an eye on your melted chocolate- When microwaving chocolate, stop it every 15-30 seconds to give it a stir. This keeps the chocolate from scorching and not being heated a moment more than necessary.
