  • 4 halibut fillets 6 oz/170g each
  • 1 tbsp 15ml olive oil
  • 1 tbsp 14g unsalted butter
  • 1 lemon juiced and zested, about 2 tbsp juice and 1 tsp zest
  • 2 garlic cloves 6g, minced
  • 1 tsp 2g fresh dill (or ½ tsp dried dill)
  • Salt and black pepper to taste
  • Fresh parsley 2g, chopped, for garnish, optional

Instructions
 

Preheat the Oven

  • I preheat the oven to 400°F (200°C) to prepare for baking.

Prepare the Halibut

  • I rinse 4 halibut fillets under cold water and pat them dry with paper towels to ensure a crisp sear.

Season the Fish

  • I drizzle each fillet with 1 tbsp olive oil, then season both sides with salt, black pepper, and 1 tsp fresh dill.

Sear the Fish

  • In an oven-safe skillet over medium-high heat, I melt 1 tbsp butter. I add the halibut fillets and sear for 3–4 minutes per side until golden brown.

Add Garlic and Lemon

  • I scatter 2 minced garlic cloves around the fillets, squeeze 2 tbsp lemon juice over them, and sprinkle 1 tsp lemon zest for a fresh, bright flavor.

Bake the Fish

  • I transfer the skillet to the oven and bake for 10–15 minutes, until the fish flakes easily or reaches 145°F (63°C) internally, checked with a meat thermometer.

Serve

  • I remove the skillet from the oven, garnish with fresh parsley, and serve warm.
