Ingredients
  

For the Patties:

  • 1 lb 450g ground chicken (90–93% lean)
  • 1 small yellow onion grated
  • ½ tsp minced garlic
  • 1 tsp dried parsley
  • 1 tsp garlic powder
  • ¼ tsp kosher salt
  • ¼ tsp black pepper

For the Gravy:

  • ½ cup 60g all-purpose flour (for dredging)
  • ¼ cup 60ml olive oil
  • 1 large yellow onion sliced
  • 2 cups 150g sliced mushrooms (cremini or button)
  • 2 tbsp 28g salted butter
  • 2 tbsp 15g all-purpose flour
  • 2 cups 480ml chicken or vegetable broth
  • Salt and black pepper to taste

Instructions
 

Form the Patties

  • In a large bowl, I mix 1 lb ground chicken, 1 grated onion, ½ tsp garlic, 1 tsp parsley, 1 tsp garlic powder, ¼ tsp salt, and ¼ tsp pepper, blending gently to keep this chicken patty delight tender. I shape the mixture into 4 oblong patties, about ¾-inch thick.

Coat the Patties

  • I spread ½ cup flour in a shallow bowl, seasoning with a pinch of salt and pepper. I lightly dredge each patty in the flour, shaking off excess, for a crispy Ground Chicken Salisbury Steak.

Cook the Patties

  • In a large skillet over medium heat, I heat ¼ cup olive oil. I cook the patties for 4–5 minutes per side until golden and cooked through, then remove and cover with foil to keep warm for this mushroom gravy chicken dish.
