Ingredients
  

  • 2 medium zucchinis sliced into ½-inch rounds
  • 4 tablespoons unsalted butter melted
  • 3 cloves garlic minced
  • 1 teaspoon dried oregano or Italian seasoning
  • Salt and pepper to taste
  • Skewers wooden, soaked in water for 30 minutes, or metal

Instructions
 

  • Preheat the Grill: Preheat your grill to medium heat. If using wooden skewers, soak them in water for 30 minutes to prevent burning.
  • Make the Garlic Butter: In a small bowl, mix melted butter, minced garlic, oregano, salt, and pepper.
  • Assemble Skewers: Thread zucchini rounds onto skewers, leaving space between each slice.
  • Brush with Garlic Butter: Use a pastry brush to generously coat zucchini on all sides with the garlic butter mixture.
  • Grill: Place skewers on grill and cook for 8–10 minutes, turning occasionally, until tender with grill marks.
  • Serve: Remove from grill, drizzle with remaining garlic butter if desired, and serve warm.

Notes

  • For variety: Substitute yellow squash or add a pinch of red pepper flakes for heat.
  • Dairy-free option: Use olive oil instead of butter.
  • Oven method: Bake at 425°F for 12–15 minutes, turning halfway through.
  • Storage: Remove from skewers and refrigerate in an airtight container for up to 2 days. Reheat in oven for best results.
