- 1 lb 450g sirloin steak, cut into 1-inch cubes
- 1 lb 450g baby potatoes, halved or quartered
- 3 tbsp 45g unsalted butter, divided
- 1 tbsp 15ml olive oil
- 4 garlic cloves minced
- ½ tsp 1g dried thyme
- ½ tsp 1g dried rosemary
- ½ tsp 3g kosher salt, or to taste
- ¼ tsp black pepper or to taste
- 2 tbsp 8g fresh parsley, chopped (for garnish)
Cook Potatoes
I heat a large skillet over medium heat, adding 1 tbsp butter and 1 tbsp olive oil. Once melted and hot, I add 1 lb halved baby potatoes, seasoning with ½ tsp dried thyme, ½ tsp dried rosemary, ¼ tsp salt, and a pinch of pepper. I cook for 10–12 minutes, stirring occasionally, until fork-tender and golden brown, then set aside.
Sear Steak Bites
In the same skillet, I melt 1 tbsp butter over medium-high heat. I add 1 lb sirloin steak cubes in a single layer, avoiding overcrowding. I sear for 2–3 minutes per side until browned and cooked to my liking, then remove and set aside.
Make Garlic Butter
I lower the heat to medium, add 1 tbsp butter, and sauté 4 minced garlic cloves for 1 minute until fragrant, careful not to burn it.
- Do not overcrowd the skillet when searing the steak to ensure even cooking.
