- 2 fish fillets cod, tilapia, or halibut
- 6 sprigs fresh thyme chopped
- 3 sprigs fresh rosemary chopped
- 1 teaspoon dried oregano
- 2 teaspoons parsley chopped or dried
- 1 cup cherry tomatoes halved
- ½ cup olives pitted
- 1 medium onion diced
- 1 zucchini diced
- Olive oil
- Salt and pepper to taste
- Preheat your oven to 375°F (190°C). 
- Place the fish fillets in a baking dish. 
- Sprinkle the chopped thyme, rosemary, dried oregano, and parsley over the fish. 
- Arrange the cherry tomatoes, olives, diced onion, and zucchini around the fish in the baking dish. 
- Drizzle with olive oil and season with salt and pepper to taste. 
- Bake in the preheated oven for 20-25 minutes, or until the fish is cooked through and flakes easily with a fork. 
- Serve hot, garnished with additional parsley if desired. 
- For best results, use fresh herbs. If using dried herbs, adjust the quantity as dried herbs are more concentrated.
- You can substitute olives with capers or artichoke hearts if desired.
- The dish can be prepared ahead of time and stored in the refrigerator for up to 24 hours before baking.
