Ingredients
  

  • 1/2 cup cream cheese softened
  • 2 tbsp sugar
  • 1/2 tsp vanilla extract
  • 1/2 cup strawberries diced
  • 4 tortillas 6-inch
  • 2 tbsp butter softened
  • 1 tsp sugar
  • 1/2 tsp cinnamon
  • Strawberry sauce for dipping

Instructions
 

  • In a mixing bowl, beat the softened cream cheese, sugar, and vanilla extract until smooth. Gently fold in the diced strawberries.
  • Spread half of the strawberry cream cheese mixture onto one tortilla.
  • Heat 1 teaspoon of butter in a pan over medium-high heat. Place the tortilla, cream cheese side up, in the pan.
  • Spread 1 teaspoon of butter on a second tortilla and place it butter side up on top of the first tortilla.
  • Cook each side for 2-3 minutes, or until golden brown and crispy.
  • Mix cinnamon and sugar, then sprinkle on top of the cooked quesadilla.
  • Repeat the process for the second quesadilla. Let them sit for 2 minutes, then slice and serve with strawberry sauce.

Notes

  • Ensure cream cheese is softened for easy mixing.
  • For best results, serve quesadillas immediately while they are still crispy.
  • If storing leftovers, let them cool completely before refrigerating or freezing.
