For the Cupcakes:

  • 1 1/4 cups all-purpose flour
  • 1 cup granulated sugar
  • 1/2 cup unsalted butter softened
  • 2 large eggs
  • 2 teaspoons baking powder
  • 1/2 teaspoon salt
  • 3/4 cup whole milk
  • 1 teaspoon vanilla extract

For the Custard Filling:

  • 1 cup whole milk
  • 1/2 cup granulated sugar
  • 3 large egg yolks
  • 2 tablespoons cornstarch
  • 1 teaspoon vanilla extract
  • 2 tablespoons unsalted butter

For the Chocolate Ganache:

  • 1 cup semisweet chocolate chips
  • 1/2 cup heavy cream

Instructions
 

  • Prepare the Cupcakes: Preheat oven to 350°F (175°C). Line a muffin tin with cupcake liners. Cream together butter and sugar until fluffy. Add eggs one at a time, then mix in vanilla. Whisk together flour, baking powder, and salt. Gradually add dry ingredients to wet ingredients, alternating with milk. Divide batter among liners and bake for 18-20 minutes. Cool completely.
  • Prepare the Custard Filling: Heat milk in a saucepan until simmering. Whisk sugar, egg yolks, and cornstarch in a bowl. Gradually add hot milk to egg mixture, whisking constantly. Return to saucepan and cook until thickened. Stir in vanilla and butter. Chill custard in the refrigerator.
  • Prepare the Chocolate Ganache: Combine chocolate chips and heavy cream in a microwave-safe bowl. Heat in 30-second intervals, stirring until smooth.
  • Assemble the Cupcakes: Once cupcakes are cooled, remove centers and fill with custard. Spoon ganache over cupcakes, allowing it to drip down the sides.

Notes

  • Ensure cupcakes are completely cooled before adding custard and ganache to prevent melting.
  • If custard is too thick, whisk in a bit of milk until desired consistency is achieved.
