Ingredients

For the Chicken:

  • 4 boneless skinless chicken breasts (1.5 lb/680g)
  • 1 cup 125g all-purpose flour
  • 1 cup 100g panko breadcrumbs
  • 2 tsp 6g garlic powder
  • Salt and pepper to taste
  • 2 large eggs beaten (optional, for egg wash)
  • 4 soft sandwich buns brioche or potato buns

For the Garlic Mayo:

  • 1 cup 240g mayonnaise
  • 3 cloves garlic minced
  • 2 tbsp 30ml fresh lemon juice
  • Salt and pepper to taste

Instructions

Make Garlic Mayo

  • I mix 1 cup mayonnaise, 3 minced garlic cloves, 2 tbsp lemon juice, and a pinch of salt and pepper in a bowl. I refrigerate it to meld flavors for a bold zesty chicken sandwich.

Preheat Oven

  • I preheat the oven to 400°F (200°C) and line a baking sheet with parchment for a perfect crispy baked sandwich.

Prep Chicken

  • I season 4 chicken breasts with salt and pepper, halving thick ones for even cooking in this flavorful chicken delight.

Bread Chicken

  • I set up 3 bowls: flour with 2 tsp garlic powder, beaten eggs (if using), and panko. I dredge each breast in flour, dip in egg, then coat in panko, pressing firmly for a crunchy zesty chicken sandwich.

Bake Chicken

  • I place chicken on the baking sheet and bake for 25–30 minutes until golden and 165°F (74°C) internally. I broil for 1–2 minutes for extra crunch in this crispy baked sandwich, watching closely.

Assemble Sandwich

  • I toast 4 buns, spread garlic mayo on both halves, add chicken, and top with lettuce, tomato, or pickles for a flavorful chicken delight. I serve immediately.

Notes

  • Use a wire rack for extra crispiness if available.
  • Press breadcrumbs firmly into chicken to help them stick.
  • Let chicken rest before assembling to avoid soggy buns.
  • Top with lettuce, tomato, pickles, avocado, or cheese for added flavor.
  • Garlic mayo can be used as a dip or sandwich spread. Store leftovers for up to 5 days.
  • Store baked chicken separately and reheat in oven or air fryer to maintain crunch.
