  • 1 medium yellow onion diced
  • 2 cloves garlic minced
  • 1/4 cup all-purpose flour
  • 4 cups chicken or vegetable broth

Soup:

  • 3 cups fresh broccoli florets chopped
  • 1 large carrot grated
  • 2 cups half-and-half or whole milk
  • 2 cups shredded sharp cheddar cheese
  • Salt and black pepper to taste
  • Pinch of ground nutmeg optional
  • Extra shredded cheese for garnish

Instructions
 

  • Sauté Aromatics: In a large pot, melt the butter over medium heat. Add the diced onion and sauté until softened. Stir in garlic and cook until fragrant.
