Ingredients
  

  • 2 cups 300g fresh or frozen corn kernels
  • 1 cup 120g all-purpose flour
  • ½ cup 120ml milk
  • 2 large eggs
  • 1 tsp 4g baking powder
  • ½ tsp 3g salt
  • ¼ tsp 1g black pepper
  • ¼ cup 25g chopped green onions or chives (optional)
  • Vegetable oil for frying

Instructions
 

Heat Skillet

  • I heat 2–3 tbsp vegetable oil in a large skillet over medium heat until shimmering, ensuring a crispy fry.

Mix Dry Ingredients

  • In a mixing bowl, I combine 1 cup flour, 1 tsp baking powder, ½ tsp salt, and ¼ tsp black pepper.

Add Corn

  • I stir in 2 cups corn kernels and ¼ cup green onions (if using) to the dry mixture.

Mix Wet Ingredients

  • In another bowl, I whisk 2 eggs and ½ cup milk until smooth.

Combine and Fry

  • I gradually add the wet ingredients to the dry, mixing until just combined. Using a spoon, I drop 2–3 tbsp batter per fritter into the hot skillet, forming 3-inch rounds. I fry for 3–4 minutes per side until golden, then drain on paper towels.
