Corn Fritters are a crispy, golden treat that’s quick to make and perfect for any occasion. These golden corn bites bring joy with their sweet corn flavor and crunchy texture.
I heat 2–3 tbsp vegetable oil in a large skillet over medium heat until shimmering, ensuring a crispy fry.
Mix Dry Ingredients
In a mixing bowl, I combine 1 cup flour, 1 tsp baking powder, ½ tsp salt, and ¼ tsp black pepper.
Add Corn
I stir in 2 cups corn kernels and ¼ cup green onions (if using) to the dry mixture.
Mix Wet Ingredients
In another bowl, I whisk 2 eggs and ½ cup milk until smooth.
Combine and Fry
I gradually add the wet ingredients to the dry, mixing until just combined. Using a spoon, I drop 2–3 tbsp batter per fritter into the hot skillet, forming 3-inch rounds. I fry for 3–4 minutes per side until golden, then drain on paper towels.
