- 1 lb ground chicken
- 1 cup grated zucchini squeezed of excess moisture
- 1/4 cup almond flour or breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic minced
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
- Preheat oven to 400°F (200°C). 
- In a large bowl, combine ground chicken, grated zucchini, almond flour (or breadcrumbs), Parmesan cheese, egg, minced garlic, paprika, dried oregano, salt, and pepper. Mix until well combined. 
- Shape the mixture into small, bite-sized patties (poppers) and place them on a baking sheet lined with parchment paper. 
- Bake for 18-20 minutes, or until cooked through and lightly browned. 
- Ensure to squeeze out excess moisture from the grated zucchini to prevent the poppers from being too wet.
