Ingredients
  

  • 1 lb ground chicken
  • 1 cup grated zucchini squeezed of excess moisture
  • 1/4 cup almond flour or breadcrumbs
  • 1/4 cup grated Parmesan cheese
  • 1 egg
  • 2 cloves garlic minced
  • 1/2 tsp paprika
  • 1/2 tsp dried oregano
  • Salt and pepper to taste

Instructions
 

  • Preheat oven to 400°F (200°C).
  • In a large bowl, combine ground chicken, grated zucchini, almond flour (or breadcrumbs), Parmesan cheese, egg, minced garlic, paprika, dried oregano, salt, and pepper. Mix until well combined.
  • Shape the mixture into small, bite-sized patties (poppers) and place them on a baking sheet lined with parchment paper.
  • Bake for 18-20 minutes, or until cooked through and lightly browned.

Notes

  • Ensure to squeeze out excess moisture from the grated zucchini to prevent the poppers from being too wet.
