- 1 lb ground chicken
- 1 cup grated zucchini squeezed of excess moisture
- 1/4 cup almond flour or breadcrumbs
- 1/4 cup grated Parmesan cheese
- 1 egg
- 2 cloves garlic minced
- 1/2 tsp paprika
- 1/2 tsp dried oregano
- Salt and pepper to taste
Preheat oven to 400°F (200°C).
In a large bowl, combine ground chicken, grated zucchini, almond flour (or breadcrumbs), Parmesan cheese, egg, minced garlic, paprika, dried oregano, salt, and pepper. Mix until well combined.
Shape the mixture into small, bite-sized patties (poppers) and place them on a baking sheet lined with parchment paper.
Bake for 18-20 minutes, or until cooked through and lightly browned.
- Ensure to squeeze out excess moisture from the grated zucchini to prevent the poppers from being too wet.
- Adjust seasoning and spice levels according to personal preference.
