Ingredients
  

  • 1 whole chicken about 3–4 lbs/1.4–1.8 kg
  • 10 cups 2.4 liters water
  • 3 large carrots sliced
  • 3 celery stalks chopped
  • 1 large onion chopped
  • 4 garlic cloves minced
  • 1- inch piece fresh ginger peeled and sliced (optional)
  • 1 bay leaf
  • 1 tsp dried thyme
  • 1 tsp salt adjust to taste
  • ½ tsp black pepper adjust to taste
  • ¼ cup fresh parsley chopped
  • Juice of ½ lemon

Instructions
 

Build the Broth

  • I place 1 whole chicken in a large stock pot and cover with 10 cups water. I bring it to a boil, skimming foam to ensure a clear, golden broth for this homemade chicken soup.

Add Vegetables and Herbs
