Ingredients
  

For the Cookies:

  • 1 cup 120 g pecan halves
  • 1 ¾ cups 210 g gluten-free measure-for-measure flour
  • ½ tsp baking soda
  • ¼ tsp baking powder
  • ½ tsp kosher salt
  • ¼ tsp ground cinnamon
  • ½ cup 113 g unsalted butter, softened
  • ½ cup 100 g light brown sugar
  • ¼ cup 50 g granulated sugar
  • 1 large egg room temperature
  • ¼ cup 60 ml pure maple syrup
  • 1 tsp vanilla extract
  • 1 tsp maple extract

For the Maple Glaze:

  • 1 cup 120 g powdered sugar
  • 2 tbsp 30 ml pure maple syrup
  • 2 tbsp 30 ml heavy cream
  • ¼ tsp vanilla extract
  • ¼ tsp maple extract
  • tsp salt

Instructions
 

Toast the Pecans

  • I preheat the oven to 350°F (175°C). I spread 1 cup pecan halves on a baking sheet and toast for 8–10 minutes until fragrant. I cool slightly, chop, and set aside for this chewy maple cookie.

Mix Dry Ingredients

  • In a bowl, I whisk 1 ¾ cups gluten-free flour, ½ tsp baking soda, ¼ tsp baking powder, ½ tsp kosher salt, and ¼ tsp cinnamon. I set this aside for the cozy recipe.

Cream Butter and Sugars

  • In a large bowl, I cream ½ cup softened butter, ½ cup brown sugar, and ¼ cup granulated sugar for 2–3 minutes until fluffy. I add 1 egg, ¼ cup maple syrup, 1 tsp vanilla, and 1 tsp maple extract, mixing until just combined for this nutty maple bite.

Combine and Chill

  • I add the dry ingredients to the wet mixture, mixing on low until a few flour streaks remain. I fold in the chopped pecans, then chill the dough for 30 minutes to enhance flavor and ensure a chewy maple cookie.

Bake the Cookies

  • I preheat the oven to 350°F (175°C) and line baking sheets with parchment. I scoop 1 ½ tbsp dough portions, roll into balls, and place on sheets.
