Ingredients
  

  • 2 cups fresh or frozen blueberries
  • 1/4 cup granulated sugar
  • 1 tablespoon lemon juice
  • 1 teaspoon cornstarch
  • 2 tablespoons water
  • 1/2 teaspoon vanilla extract

Instructions
 

  • In a medium saucepan, combine the blueberries, sugar, and lemon juice.
  • Stir the mixture over medium heat and bring it to a simmer.
  • In a small bowl, mix the cornstarch and water to create a slurry, then add it to the blueberry mixture.
  • Continue to simmer the mixture for 3-5 minutes, or until it thickens to a syrup-like consistency.
  • Once it thickens, remove it from the heat and stir in the vanilla extract.
  • Let the blueberry topping cool to room temperature before pouring it over your cheesecake.
