Ingredients

  • 4 boneless skinless chicken breasts (about 2 lbs / 900 g), pounded to even thickness
  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • ½ teaspoon black pepper
  • ½ teaspoon paprika
  • For the garlic parmesan sauce:
  • 4 tablespoons unsalted butter
  • 4 cloves garlic minced
  • ½ cup grated parmesan cheese
  • 2 tablespoons chopped fresh parsley
  • Optional: crushed red pepper flakes for heat

Instructions

  • Preheat your Blackstone griddle to medium-high heat for about 10 minutes.
  • Pat chicken breasts dry and rub with olive oil, salt, pepper, and paprika.
  • Place chicken on the hot griddle and cook for 5–6 minutes per side, flipping once, until internal temperature reaches 165°F (74°C). Let rest for a few minutes after removing from heat.
  • While chicken rests, melt butter in a small saucepan over medium heat. Add minced garlic and sauté for 30–60 seconds until fragrant. Remove from heat and stir in parmesan and parsley.
  • Slice chicken and drizzle generously with garlic parmesan sauce. Garnish with more parsley and serve hot.

Notes

  • Don’t skip preheating the griddle — it ensures an even sear.
  • Use a meat thermometer to avoid overcooking the chicken.
  • Try cubing the chicken and threading onto skewers for Blackstone chicken kabobs.
  • Leftovers can be sliced for wraps, salads, or reheated gently on the grill the next day.
