Divide the mixture into 4-6 equal portions and shape into patties about 3/4-inch thick. Make a slight indentation in the center of each patty with your thumb.
Preheat grill or skillet over medium-high heat. Cook patties for 4-5 minutes per side for medium-rare, adjusting time for preferred doneness.
Let patties rest for a few minutes before serving. Serve on toasted buns with preferred toppings.
