Air Fryer Ham and Cheese Pockets

Ingredients
  

  • 4 8-inch flour tortillas
  • 1 cup deli ham chopped
  • 1 ½ cups shredded cheddar jack cheese
  • 2 tbsp unsalted butter softened

Instructions
 

Warm Tortillas

  • I stack 4 tortillas on a microwave-safe plate, cover with a damp paper towel, and microwave for 20 seconds to make them pliable.

Prep Filling

  • I chop 1 cup deli ham into small pieces for even filling. I set aside 1 ½ cups shredded cheddar jack cheese, reserving ¼ cup for topping.

Assemble Pockets

  • On each warm tortilla, I place ¼ cup cheese in the center, add ¼ cup chopped ham, then top with another ¼ cup cheese. I fold the tortilla edges inward, then roll tightly to seal, ensuring no filling escapes.

Add Topping

  • I brush the tops of each pocket with softened butter and press 1 tbsp reserved cheese into the butter for a crispy, cheesy crust.

Air Fry

  • I preheat my air fryer to 380°F. I place the pockets seam-side down in the basket, leaving space for air circulation, and cook for 5 minutes until golden and the cheese is melted. I let them cool for 2 minutes before serving.

Notes

  1. Always warm tortillas before folding to prevent cracking
  2. Press cheese topping into the butter so it doesn't blow around in the air fryer
  3. These can be made ahead and frozen for up to 3 months
  4. Cooking times may vary depending on your air fryer model
  5. Can also be baked in a 400°F oven for 12-15 minutes if you don't have an air fryer
