- 1 large eggplant
- 2 tablespoons avocado oil
- 2 tablespoons white sugar
- 2 tablespoons low sodium soy sauce
- 2 tablespoons minced garlic approximately 3 cloves
- 1 tablespoon chili oil optional
Preheat your air fryer to 350°F (175°C).
Slice the eggplant into thick rounds, approximately 1/2 inch thick. Cut slits in the center of each slice to create openings for the sauce.
In a shallow bowl, mix together the avocado oil, white sugar, low sodium soy sauce, minced garlic, and chili oil (if using).
Line the air fryer basket or tray with parchment paper to prevent sticking and simplify clean-up.
Arrange the eggplant rounds in a single layer in the air fryer basket or tray. Spoon the sauce mixture over each slice, ensuring even coverage.
Air fry the eggplant at 350°F (175°C) for 15 minutes. For a crispier crust, broil for an additional 2 minutes after air frying.
Preheat the oven to 375°F (190°C). Line a baking sheet with parchment paper and place the eggplant slices on the sheet. Roast for 30 minutes until the eggplant is crispy on the outside and soft inside.
